Pumpkin Muffins, Back to School, and All Things Fall!

First of all I wanted to say thank you to all of you guys for your kind words and prayers for our little guy. Even though the not knowing makes it a scary time, it is comforting to know so many people are thinking and praying for him!

In the mean time, we did manage to start school back! I truly can't believe I have a 4th and 2nd grader!

We are having some AMAZING weather here. How about you guys? It really puts me in a baking mood.
I came across this recipe for Pumpkin Chocolate Chip Muffins and had to make it twice so I could get a picture for you. Yes, they were gone thatfast.

Pumpkin Chocolate Chip Muffins

1 cup white sugar
1/4 cup vegetable oil
2 eggs1 can of canned pumpkin1/4 cup water
  • 1 1/2 cups all-purpose flour
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup semisweet chocolate chips

Preheat oven to 400 degrees. Grease muffin pan or use liners.

Mix all ingredients until well blended.

Fill muffin tins about 2/3rds of the way full.

Bake in preheated oven for 20-22 mins.

  2. Your kiddos ARE so cute!!! And oh my gosh...I would do anything for one of those muffins right now! I am in the I'll-eat-or-drink-anything-with-pumpkin-in-it phase of fall. I will definitely have to try these out this weekend :-)
