30 Days of Baby ~ Salmon Patties and Baked Cheese Grits

This meal may be a little southern for all of my northern followers but this southern girl has to get her fill of grits every now and then. Not to mention the fact that I have my Mamma bring up these whole corn yellow grits straight from south GA. :-)

For an ongoing list of Make Ahead Meals visit my 30 Days of Baby link.

One of my families favorites are these yummy Salmon Patties. I bake these instead of frying them to keep a little of the fat away.

Salmon Patties Recipe

  • 3 Cans Pink Salmon (I buy the already de-boned cans but if you buy the big ones you will need to pull out the bones)
  • 2 Eggs
  • 1/2 Cup Celery (Finely Chopped and Optional)
  • 1 Cup Italian Bread Crumbs
Mix all the ingredients in a large mixing bowl. Shape into patties. Add bread crumbs if needed until patties hold their shape well.

If you are freezing, stop here. Place the shaped patties on a cookie sheet and freeze. Then transfer to freezer bags to store.

To cook, place on a jelly roll pan or something similar with sides. Cover bottom with cooking oil and bake at 425 until golden brown. Turn patties as needed.

Baked Cheese Grits Recipe

  • 1 Quart Milk
  • 1/2 Cup Butter
  • 1 Cup Uncooked Grits
  • 1 Teaspoon Salt
  • 2 Eggs
  • 1/2 Teaspoon Pepper
  • 1 Cup Shredded Cheddar Cheese
  • 1/3 Cup Butter
  • 1/2 Cup Grated Parmesan Cheese
Bring milk to a boil in medium pot. Melt butter in milk. Gradually mix in the grits, stirring constantly for about 5 minutes. Mix in eggs, cheddar cheese, salt, pepper and remaining butter. Pour into a lightly greased baking dish. Top with Parmesan cheese.

If you are freezing, cover with foil and freeze before baking. Then thaw before baking.

Bake at 350 for 1 hour. Grits should be firm and golden brown.

  1. I am glad you shared this recipe. My hubby ate salmon patties often growing up and I have never made them because I don't know how. Sounds good! Can't wait to try it. Thanks for sharing!

  2. hahaha this is SO southern! :) Love it!
