This meal may be a little southern for all of my northern followers but this southern girl has to get her fill of grits every now and then. Not to mention the fact that I have my Mamma bring up these whole corn yellow grits straight from south GA. :-)

One of my families favorites are these yummy Salmon Patties. I bake these instead of frying them to keep a little of the fat away.
Salmon Patties Recipe
- 3 Cans Pink Salmon (I buy the already de-boned cans but if you buy the big ones you will need to pull out the bones)
- 2 Eggs
- 1/2 Cup Celery (Finely Chopped and Optional)
- 1 Cup Italian Bread Crumbs
Mix all the ingredients in a large mixing bowl. Shape into patties. Add bread crumbs if needed until patties hold their shape well.
If you are freezing, stop here. Place the shaped patties on a cookie sheet and freeze. Then transfer to freezer bags to store.
To cook, place on a jelly roll pan or something similar with sides. Cover bottom with cooking oil and bake at 425 until golden brown. Turn patties as needed.
Baked Cheese Grits Recipe
- 1 Quart Milk
- 1/2 Cup Butter
- 1 Cup Uncooked Grits
- 1 Teaspoon Salt
- 2 Eggs
- 1/2 Teaspoon Pepper
- 1 Cup Shredded Cheddar Cheese
- 1/3 Cup Butter
- 1/2 Cup Grated Parmesan Cheese
Bring milk to a boil in medium pot. Melt butter in milk. Gradually mix in the grits, stirring constantly for about 5 minutes. Mix in eggs, cheddar cheese, salt, pepper and remaining butter. Pour into a lightly greased baking dish. Top with Parmesan cheese.
If you are freezing, cover with foil and freeze before baking. Then thaw before baking.
Bake at 350 for 1 hour. Grits should be firm and golden brown.
