Valentines Day with Kids

It took all of 1 year to realize how difficult it was to get a baby sitter on Valentines Day. So the following year we decided to get creative. 

We put the kids to bed a little earlier and had a romantic dinner at home. Just the two of us. We enjoyed it so much we have continued the tradition every year and also thrown several random "date" nights since then, even if it is just a movie and glass of wine. 

Here's what our Valentine menu is looking like this year:

Cheese Stuffed Chicken

  • 4 Chicken Breast
  • 3/4 Cup Mozzarella Cheese
  • 1/2 Cup Feta Cheese
  • 2 Slices Bacon, cooked and crumbled
  • Salt and Pepper to taste
  • Paprika
  • Ranch Dressing
Combine Mozzarella Cheese, Feta Cheese and Bacon. Cut pockets in the chicken breast and stuff with cheese and bacon filling. Sprinkle with Salt, Pepper, and Paprika and drizzle with Ranch dressing. 

Bake uncovered at 350 degrees for 50-55 minutes.

Garlic Mashed Potatoes

  • 4 large potatos, peeled and chopped
  • Milk
  • Sour Cream (Or Plain Greek Yogurt)
  • Garlic Salt
  • Salt
I never measure for this so I'll just give you the ingredients and you can get your tasting spoons ready! Boil the potatoes until tender. Add *approximately* 1/2 cup milk, 1/2 cup sour cream or greek yogurt, 2 teaspoons garlic salt and 1 teaspoon of salt.

Sesame Asparagus

Cut the ends off and wash your asparagus. In a large saucepan, melt 2 tablespoons of butter. Turn heat to medium and add the asparagus. Sprinkle with sesame seeds. Cover and cook until tender. Add salt, pepper, and garlic salt to taste.

And my hubby's favorite:

Blond Brownies

  • 1 Small Box Light Brown Sugar
  • 4 Eggs
  • 1 Stick Butter
  • 1 1/2 Cup Flour
  • 1/4 Teaspoon Salt
  • 1 1/2 Teaspoon Baking Powder
  • 1 Small Package Pecans, Chopped
  • 2 Teaspoon Vanilla
Cook Sugar, Eggs, and Butter in a large saucepan on low, stirring constantly until slightly thick. Add dry ingredients to hot mixture. Then fold in nuts and vanilla. 

Pour into greased 9x13 pan. Bake at 325 degrees for about 25 minutes.

  1. That meal sounds so yummy! We always stay in as we'll and I will usually make a special dessert or something for just us. My husband had to work last night so we had a special dinner with my mom:).
